Fenugreek Rice with Green Kale and Mint

s comforting Indian rice dish draws on the deep, earthy flavor of fenugreek balanced by refreshing mint and tender kale. It’s inspired by home-style cooking from North India, where herbs bring soul to every spoonful.


Ingredients:

  • 1 cup basmati rice, rinsed

  • 2 cups water

  • 1 tablespoon olive oil or ghee

  • 1 teaspoon cumin seeds

  • 1 small onion, sliced

  • 1 teaspoon turmeric

  • Salt to taste

  • A handful of green kale, chopped

  • 1 tablespoon chopped mint

  • 1 tablespoon chopped fenugreek leaves (or 1 teaspoon dried)

  • Optional: a small green chili, finely chopped


Instructions:

  1. Cook the rice in water until tender. Set aside.

  2. In a large pan, heat oil or ghee and add cumin seeds. Let them crackle for a few seconds.

  3. Add onion and sauté until soft and lightly golden.

  4. Add turmeric, chopped kale, mint and fenugreek. Stir and cook for 3 to 4 minutes until the greens soften.

  5. Add the cooked rice and mix gently until everything is well combined.

  6. Season with salt and add chili if using.

  7. Serve warm as a main or side dish.
