Fenugreek Rice with Green Kale and Mint

s comforting Indian rice dish draws on the deep, earthy flavor of fenugreek balanced by refreshing mint and tender kale. It’s inspired by home-style cooking from North India, where herbs bring soul to every spoonful.
Ingredients:
1 cup basmati rice, rinsed
2 cups water
1 tablespoon olive oil or ghee
1 teaspoon cumin seeds
1 small onion, sliced
1 teaspoon turmeric
Salt to taste
A handful of green kale, chopped
1 tablespoon chopped mint
1 tablespoon chopped fenugreek leaves (or 1 teaspoon dried)
Optional: a small green chili, finely chopped
Instructions:
Cook the rice in water until tender. Set aside.
In a large pan, heat oil or ghee and add cumin seeds. Let them crackle for a few seconds.
Add onion and sauté until soft and lightly golden.
Add turmeric, chopped kale, mint and fenugreek. Stir and cook for 3 to 4 minutes until the greens soften.
Add the cooked rice and mix gently until everything is well combined.
Season with salt and add chili if using.
Serve warm as a main or side dish.
