Aloo Basil Masala with Red Oak Lettuce

Ingredients:

  • 2 medium potatoes, peeled and cubed

  • 1 tablespoon olive oil or ghee

  • 1 small onion, sliced

  • 1 garlic clove, minced

  • 1 teaspoon cumin seeds

  • 1 teaspoon garam masala

  • 1 teaspoon turmeric

  • Salt to taste

  • A handful of red oak lettuce, shredded

  • 2 tablespoons chopped green basil

  • Optional: chili flakes for heat


Instructions:

  1. Boil the potatoes in salted water until tender. Drain and set aside.

  2. In a pan, heat oil and add cumin seeds. Let them sizzle for a few seconds.

  3. Add onion and garlic. Sauté until soft and golden.

  4. Add turmeric and garam masala. Stir for 30 seconds.

  5. Add cooked potatoes to the pan and toss gently with the spices.

  6. Add shredded red oak lettuce and stir just until it wilts.

  7. Turn off the heat and fold in chopped green basil.

  8. Taste and adjust salt. Sprinkle chili flakes if desired.

  9. Serve with flatbread or rice.
