Indian Spiced Dal with Green Kale and Cilantro

Ingredients:

  • 1 cup red lentils, rinsed

  • 3 cups water

  • 1 tablespoon olive oil or ghee

  • 1 small onion, chopped

  • 2 garlic cloves, minced

  • 1 teaspoon grated fresh ginger

  • 1 teaspoon turmeric

  • 1 teaspoon ground coriander

  • 1 teaspoon mustard seeds

  • A handful of green kale leaves, chopped

  • 2 tablespoons chopped cilantro

  • Salt to taste

  • Optional: squeeze of lemon before serving

Instructions:

  1. In a pot, combine red lentils and water. Bring to a boil, reduce heat and simmer for 15 minutes.

  2. In a separate pan, heat oil or ghee. Add mustard seeds and let them pop. Add onion, garlic and ginger. Cook for 3 minutes.

  3. Add turmeric and coriander. Stir well.

  4. Add chopped kale to the pan and sauté for 2 minutes.

  5. Pour the spiced mixture into the cooked lentils. Add salt to taste. Simmer for another 5 minutes.

  6. Turn off the heat and stir in fresh cilantro.

  7. Serve warm with rice or flatbread.
