Indian Spiced Dal with Green Kale and Cilantro

Preparation time: 25 minutes

Ingredients:
1 cup red lentils, rinsed
3 cups water
1 tablespoon olive oil or ghee
1 small onion, chopped
2 garlic cloves, minced
1 teaspoon grated fresh ginger
1 teaspoon turmeric
1 teaspoon ground coriander
1 teaspoon mustard seeds
A handful of green kale leaves, chopped
2 tablespoons chopped cilantro
Salt to taste
Optional: squeeze of lemon before serving
Instructions:
In a pot, combine red lentils and water. Bring to a boil, reduce heat and simmer for 15 minutes.
In a separate pan, heat oil or ghee. Add mustard seeds and let them pop. Add onion, garlic and ginger. Cook for 3 minutes.
Add turmeric and coriander. Stir well.
Add chopped kale to the pan and sauté for 2 minutes.
Pour the spiced mixture into the cooked lentils. Add salt to taste. Simmer for another 5 minutes.
Turn off the heat and stir in fresh cilantro.
Serve warm with rice or flatbread.
