Tofu Lettuce Wraps with Fresh Herbs

Preparation time: 15 minutes

Ingredients:
1 head Green Little Jem lettuce, leaves separated
200 grams firm tofu, pressed and cubed
1 tablespoon soy sauce
1 tablespoon olive oil
1 teaspoon sesame oil
1 clove garlic, minced
1 teaspoon grated fresh ginger
1 small carrot, grated
2 tablespoons chopped parsley
2 tablespoons chopped cilantro
1 tablespoon chopped green basil
A squeeze of lemon juice
Salt to taste
Optional: crushed peanuts for topping
Instructions:
Heat olive oil in a pan over medium heat. Add tofu cubes and cook until golden on all sides.
Add soy sauce, sesame oil, garlic and ginger. Stir for 2 minutes until fragrant.
Turn off the heat and mix in grated carrot, parsley, cilantro and green basil.
Spoon the mixture into lettuce leaves.
Drizzle with lemon juice and sprinkle with a pinch of salt. Add crushed peanuts if desired.
Serve immediately.
