Tofu Lettuce Wraps with Fresh Herbs

Preparation time: 15 minutes



Ingredients:

  • 1 head Green Little Jem lettuce, leaves separated

  • 200 grams firm tofu, pressed and cubed

  • 1 tablespoon soy sauce

  • 1 tablespoon olive oil

  • 1 teaspoon sesame oil

  • 1 clove garlic, minced

  • 1 teaspoon grated fresh ginger

  • 1 small carrot, grated

  • 2 tablespoons chopped parsley

  • 2 tablespoons chopped cilantro

  • 1 tablespoon chopped green basil

  • A squeeze of lemon juice

  • Salt to taste

  • Optional: crushed peanuts for topping

Instructions:

  1. Heat olive oil in a pan over medium heat. Add tofu cubes and cook until golden on all sides.

  2. Add soy sauce, sesame oil, garlic and ginger. Stir for 2 minutes until fragrant.

  3. Turn off the heat and mix in grated carrot, parsley, cilantro and green basil.

  4. Spoon the mixture into lettuce leaves.

  5. Drizzle with lemon juice and sprinkle with a pinch of salt. Add crushed peanuts if desired.

  6. Serve immediately.
