Stir Fried Asian Mustard Greens with Ginger and Garlic

This classic Asian side dish brings out the bold, peppery flavor of Asian mustard greens balanced by the warmth of fresh ginger and garlic. Quick to make and naturally vibrant, it’s a perfect companion to rice or noodles.
Ingredients:
700 grams Asian mustard greens (cut into 2–3 cm pieces)
Salt, to taste
2 tablespoons avocado oil or olive oil
2 cloves garlic, finely chopped
1/2 tablespoon fresh ginger, julienned
2–3 dried red chilies (optional)
1/4 teaspoon toasted sesame oil (optional)
Instructions:
Bring a pot of water to a boil. Add a pinch of salt and blanch the Asian mustard greens briefly — about 30 seconds for stems, 10 seconds for leaves. Drain and rinse in cold water to stop the cooking.
Heat 1½ tablespoons of oil in a large pan or wok over high heat. Add the garlic, ginger, and chilies (if using) and stir for 20 seconds.
Add the Asian mustard greens and the remaining oil. Stir fry for about 30 seconds until just tender but still bright green.
Season with salt to taste. Remove from heat and drizzle with sesame oil if desired.
Serve warm or cold as a fresh, spicy side dish.
