Herbed Omelette with Mizuna and Red Coral

Preparation time: 10 minutes

Ingredients:
2 eggs
1 tablespoon milk or water
A pinch of salt
A bit of black pepper
A small handful of mizuna leaves, roughly chopped
A small handful of red coral lettuce, shredded
1 tablespoon chopped parsley
1 tablespoon chopped dill
1 tablespoon olive oil or butter
Optional: crumbled feta cheese or grated hard cheese
Instructions:
In a bowl, whisk the eggs with milk, salt and pepper.
Mix in chopped mizuna, red coral lettuce, parsley and dill.
Heat oil or butter in a nonstick pan over medium heat.
Pour the egg mixture into the pan and let it cook without stirring for 2 to 3 minutes.
If using cheese, sprinkle it on top.
Fold the omelette gently and cook for another minute.
Serve warm, with a slice of bread or on its own.
