Herbed Omelette with Mizuna and Red Coral

Preparation time: 10 minutes



Ingredients:

  • 2 eggs

  • 1 tablespoon milk or water

  • A pinch of salt

  • A bit of black pepper

  • A small handful of mizuna leaves, roughly chopped

  • A small handful of red coral lettuce, shredded

  • 1 tablespoon chopped parsley

  • 1 tablespoon chopped dill

  • 1 tablespoon olive oil or butter

  • Optional: crumbled feta cheese or grated hard cheese

Instructions:

  1. In a bowl, whisk the eggs with milk, salt and pepper.

  2. Mix in chopped mizuna, red coral lettuce, parsley and dill.

  3. Heat oil or butter in a nonstick pan over medium heat.

  4. Pour the egg mixture into the pan and let it cook without stirring for 2 to 3 minutes.

  5. If using cheese, sprinkle it on top.

  6. Fold the omelette gently and cook for another minute.

  7. Serve warm, with a slice of bread or on its own.
